Originating in Europe, lovage is easy to grow and matures quickly, with harvests beginning around 90 days. Mature plants can reach 5–6 feet tall, producing an abundance of aromatic green foliage suitable for fresh use or drying for long-term storage. In addition to the leaves, the roots can be cooked as a vegetable, and the seeds may be harvested and ground into a flavorful spice.
