Japanese White Buckwheat is an excellent cover crop that improves soil health while providing a rich nectar source for bees and other pollinators. Its fast-growing, dense foliage helps suppress weeds, prevent soil erosion, and add organic matter when tilled under. As it matures, delicate white flowers bloom in abundance, attracting honeybees, butterflies, and beneficial insects. Ideal for poor or depleted soils, buckwheat thrives in warm weather and can be sown mid-summer to early fall for a quick-growing green manure. Direct sow after the last frost, and expect blooms in as little as 4–6 weeks, making it one of the best crops for pollinator-friendly gardens and soil enrichment.
